PPRR Winter Series Race IV

The series has come to an end.  The day brought beautiful sunshine, but a killer wind.  It was a scenic, rolling 20K course in Black Forrest.  When we were in the trees the wind wasn't so terrible, but when we got out into the open country the wind hit us full force.  There were times we had to wonder if we were really still moving forward.  Nonetheless, we fought through it and had a great race. 


Being out in the country also brought a crazy encounter with some deer.  About 4 miles in, there was a stampede of deer that decided to cut right across the road in front of us.  All of us were pretty lucky to not be taken out by one of them.  But the beautiful trees all around, views of the mountains, and the nice wide trail made for a great course.  This was probably our favorite race of the series.  Pikes Peak Road Runners do a great job of putting on these races and providing an opportunity to run even in the unpredictable winter weather. 
Now we knew that Black Forrest didn't have a lot to offer as far as restaurants with mango on the menu.  So we got to thinking of how we could bring mango into the day.  Since National Pancake Day is coming up on March 1st, we thought it would be a good idea to go ahead and start celebrating early.  Why not serve mango pancakes after the race?!  As crazy as it seemed, we decided to go for it.  Some friends were kind enough to lend us their camping stoves.  Then we turned to Costco to provide us with a massive bag of pancake mix, 2 giant bottles of syrup, and a box of mangoes. 
For those of you wondering about the recipe for the mango pancakes, it was quite simple.  We cheated and just mixed up the Krusteaz pancake mix as the bag directed, diced up the mangoes, and stirred them together.  Maybe another day we'll start from scratch, but today was all about ease.
We set up stoves and got to cooking as soon as we finished the race.  We were quite thankful for a great assistant, Dustin.  He handed out the pancakes, made sure everyone got a card, and coached Maria on the precise time to flip the pancakes. 
It was so fun to share our love of mangoes with fellow racers. 
We would recommend that everyone use National Pancake Day as an excuse to try mango pancakes for yourself.  They're great anytime, but especially satisfying after a nice long run.
